After Easter is done and over with, there's usually some leftover ham that needs to be used up.

Today's recipe is perfect for that.

I absolutely love easy skillet meals, and this one is pretty delicious!!

It's super easy to make. Plus it only uses one skillet, which is perfect for weeknights when you don't feel like spending much time in the kitchen, either cooking or doing dishes.

I love ham and broccoli together and add some sharp cheddar cheese to it?? Perfection.

This is one dish we could eat over and over. I know it will be back on the menu again soon!

What is in Cheesy Ham and Broccoli Rice Skillet?

  • Jasmine Rice: It has a sweet aroma when cooked and it is stickier than other varieties of long grain rice. It has a soft, moist texture and it sweeter than other rice varieties. It's primarily grown in Thailand.
  • Butter: A dairy product consisting of approximately 80% butterfat and made from the fat and protein components of milk or cream. Most commonly made from cow's milk, but can also be made from sheep, goat, yak, or buffalo milk.
  • Broccoli: an edible green plant in the cabbage family whose large flowering head and stalk is eaten as a vegetable. The word broccoli comes from the Italian plural of broccolo, which means "the flowering crest of a cabbage! Broccoli is a great source of vitamins K and C, a good source of folate (folic acid) and also provides potassium and fiber!
  • Milk: cow's milk is a great source of calcium, vitamin D, potassium and it's a complete protein source too!

This recipe is ready in these steps:

  • In a large pan, saute the rice in butter until slightly browned
  • Add the chicken broth and garlic powder, cover and cook, stirring occasionally
  • Add the broccoli florets and cook
  • Add the remaining butter, ham, cheddar, milk and pepper
  • Heat until cheese is melted, stirring to combine
  • Cover, remove from heat and let stand for a few minutes before serving

Yield: 4 servings

Ingredients:

  • 3 tablespoons butter, divided
  • 1 cup jasmine rice
  • 3 cups chicken broth
  • 1 teaspoon garlic powder
  • 3 cups fresh broccoli florets
  • 2 cups ham, cubed
  • 3/4 cup shredded sharp cheddar cheese
  • 1/4 cup milk
  • 1/4 teaspoon black pepper

Instructions:

  1. In a large pan, saute the rice in 1 tablespoon butter over medium high heat until slightly browned.
  2. Add the chicken broth and garlic powder, reduce heat to medium, cover and cook for 12 minutes, stirring occasionally.
  3. Add the broccoli florets and cook for 6 minutes.
  4. Add the remaining 2 tablespoons butter, ham, cheddar, milk and pepper.
  5. Heat until cheese is melted, stirring to combine.
  6. Cover, remove from heat and let stand for a few minutes before serving.
